As brakes work on a hydraulic system they need fluid to operate properly. If the brakes go spongy whilst driving you should stop immediately and see a mechanic. You can build up the pressure by pumping the brake to build up pressure but this should not be used to continue your journey, only to stop the car and get help.

Total brake failure
If you need to stop immediately and your brakes have failed then you can use the handbrake in a pumping motion. If you can, change to second gear and bring the clutch up gently. The compression will act as a brake. Another option in an extreme case is to change to a low gear and switch off the engine. This is only to be done in an absolute emergency as the car will be almost impossible to steer once the engine is switched off. If you have to do this make sure you have a straight clear bit of road ahead of you to come to a full and safe stop.
